Add dynamic content from the email send itself

I would like to have a value that is set in the email send that populates in the email.�

In this case, we are tracking calls to certain phone numbers, so I'd like to have a dropdown with a handful of phone numbers that the user creating the email can pick from. Then when they send the email, the email is populated with this number. That way we can track the number in reporting.
