Detect Email of Recipient of Forwarded Email

Question: Isn't the sender/receiver email address (and all kinds of other info) in the email header? Can't the software detect changes to the email header as it is resent and forwarded and then send these updates along with any interactions within the email or web pages it links to?

Thus, a marketing response can be updated with relevant email of the last email to receive so that it writes to the corresponding CRM record (or creates a new one and updates the marketing list).

It should not matter what email client is used or whether or not it is webmail (i.e., no client). Email header info should be standardized across all email software.

Do we really only have the limited ability to tag emails with expected information and assume that all clicks relate directly to the predetermined recipient rather than to new/previously-unknown recipients? I don't believe that, so please provide proof to the contrary. Thanks!
